Ingredients

Original recipe (1X) yields 8 servings

  • 1 tablespoon olive oil

  • ¼ cup chopped red onion

  • 1 jalapeno, seeded and chopped

  • 1 clove garlic, minced

  • 1 teaspoon cumin

  • 1 teaspoon chili powder

  • 1 teaspoon salt

  • ½ teaspoon cayenne pepper

  • 2 (15 ounce) cans black beans, drained and reserving 1/4 cup liquid

  • 2 tablespoons lime juice

  • 2 tablespoons tomato paste

  • 1 tablespoon apple cider vinegar

  • 1 bunch chopped fresh cilantro, or to taste

Directions

  1. Heat oil in a skillet over medium heat. Add onion, jalapeno, and garlic. Cook until onion is soft and translucent, about 5 minutes, stirring often to prevent garlic from burning. Add cumin, chili powder, salt, and cayenne pepper and cook 5 minutes more. Remove from heat and let cool slightly.

  2. Transfer onion mixture to a blender. Add black beans, reserved 1/4 cup liquid, lime juice, tomato paste, and vinegar and blend until smooth. Transfer to a serving bowl and garnish with cilantro.
